DECAF?! Yeah that’s right, and this one is so good.

This is from Popayán, Cauca and is grown between 1700-2000 meters above sea level (MASL). More than 75 producers contribute to this regional blend. Before it’s decaffeinated, it goes through a washed process. Each producer depulps and washes their coffees after a short submerged fermentation in water. During the short fermentation process, the sugars create a byproduct known as Ethyl Acetate - which is naturally occurring in fruits. It is used as a solvent to bond with and remove caffeine from green coffee. Through a process of steaming and low pressure, the EA bonds with the caffeine molecules over the course of eight hours before having one last steam to remove any trace of the EA. This method is more successful in allowing the coffee to keep its coffee flavor.

This coffee specifically has a nice fragrance of nougat and chocolate. In the cup you may taste cinnamon, fudge, mild citrus or tropical acidity. This makes a great V60 or shot of espresso!
