This Colombian coffee is grown by the masterful Juan Pablo. Finca La Luisa is located in the small town of Bolívar, Antioquia. Juan Pablo is one of few growers who experiments with Carbonic Maceration. Carbonic Maceration is a type of Anaerobic fermentation, but it allows producers to control the level of “booziness” they might want from the coffee. Carbonic Maceration promotes fermentation at a cellular level inside of the fruit, with less alcohols being produced, which actually allows producers to extend fermentation times.
This coffee definitely offers a bit of booziness but it’s not overwhelming. I found it to be complimentary to the complex flavors that shine through the cup. It has a satisfying heavy, juicy body. You might taste black cherry, red currant, pinot noir. The dry fragrance of this coffee is also wild, you might get a whiff of Captain Berry Crunch?!
